I recently found out that this is The International Year of Quinoa (IYQ) as declared by the UN. I had an unopened packet of tricoloured quinoa so I thought I would make something out of it. This was the result.
The tomato quinoa recipe I used was from here. It can be enjoyed as a side dish but I chose to throw it into my wrap. So good!
I used to follow a falafel recipe but I’ve made it so many times that I just use these ingredients in the appropriate amounts:
-Can of chickpeas, simmered on stove for ten minutes
and I think that’s everything.
Then roll it into balls, cover it in breadcrumbs (or not) and fry.
